The Maryland Crab Meat Quality Assurance Program is a quality management project of the Maryland Department of Agriculture and the University of Maryland Sea Grant Extension Program. This is a voluntary program in which members have their crab meat and production plants undergo an extra level of inspection above and beyond the normal inspection process. This program is administered by Tom Rippen, Seafood Technology Specialist with the University of Maryland. Microbiological sampling and process verification studies assure overall bacterial quality control of potential pathogens throughout the processing environment. Under the Program, participating crab meat processors have exclusive use of the Maryland fresh cup and pasteurized can. Below is a current list of members.
